I would like to install simple, low cost, water temperature sensors, on my HP's incoming water and outgoing water lines.
Any suggestions and or pictures appreciated.

Do you mean ones that are stand alone? If so I just use the cheap indoor / outdoor thermometers with a 10 foot outdoor probe from our local home box store. I bought 8 of them and put sensors in water and matched them all up. I had one about a degree high and one about a degree low, but the other 6 were within .2F of each other. I put matching ones on the incoming and outgoing field lines, using electrical tape to attach the probe against the copper and then put the insulation back on. They have a min / max temp as well so I know the lowest temperature the incoming field temp is and record that every week.
For computer reporting, I don't know of anything cheap. The WEL would be my choice if I could scrape up the money.

I am using two different models, I got one at Home Depot and one from Menards (a mid west Home Depot type store). I have seen very similar ones on
ebay
, but I got mine on sale for $4.99

I used a two temperature 1 week data logger made by Taylor. It's about $41 at Grainger and has worked very well. It maintains a different high/low temperature for each of 7 days. I atached the probes to a bronze fitting on the in/out og my GSHP and have watched the temperatures all winter. It's accurate and addjustable under the cover.

Well, I thought I'd try Brock's idea first. See attached pic.
I'll look into Jongig's suggestion next.
