drywall and mudding rates

I'm located in south-western Ontario, Canada and was wondering if anybody experienced knows going rates for drywall work such as taping and mudding? I've gotten few quotes and I have selected a contractor but I can tell that he's trying to screw me over now that he's in and working.

What are your terms with the tapper/mudder?
Hourly rate or sq ft.

When I got mine installed couple months ago it was 20 cents sqft wall area install only.
For tapping and mudding quote was bit high 1.90 sqft wall area. So went on and got it installed and mudded myself.

By curiosity, why do you think he's trying to screw you over.

I have him drywalling a ceiling in my house. We agreed on a sq. ft. basis for install and tape/mudding. $1.20/sq. ft. install and 3 coat mudding, plus $.50 extra for california ceiling per sq. ft.
My issue starts where the ceiling ends. The house is all masonry so I have block walls that have been plastered with cementitious plaster. The drywall ceiling has to be bonded to the walls in some way so I have him taping the corner with a regular 2" paper tape. Initially he agreed to do this tape as included in the sq. ft. price, but now he's changed his mind and wants to charge me for half the wall wherever there is corner tape being applied between the wall and ceiling. This is one of the issues, others include stuff like stealing my materials when im not on site... but that's another story.

Did you get any of this in writing? People can't just "change their minds" on a price, I would tell him to do the job we agreed to for the price we agreed to or get off my job.

If your on a square foot basis and he has to blend out the corners onto your existing masonary wall thats more square feet he's working with and he's not getting the wall price since its already been done; so in a way he's getting screwed.

I don't have the details in writing (except for the basic sq. ft. price and extra for the california ceiling) but both my father and I were talking to him about the details of the job and we agreed that he was going to plaster the corners because you can't leave the corners open like that. We told him he can just do a single coat with tape so that he can go ahead and finish the ceiling, and later we would finish the wall surface ourselves. We even applied masking tape onto the walls so that he wouldn't have to do alot of work and wouldn't have to worry about doing a clean cut or smooth finish. He did a test strip on one wall and it took him about 30 seconds of work for a 10 ft section - we supply all the materials.

How do you tell the guy to just leave the worksite, I'm afraid he'll add alot of 'extra' work on his final bill and then put a lien on the house after I don't agree on paying him twice the amount we originally made a deal for.
