I'm planning a new construction and had intentions of using an 8" R-32 SIP above a timber truss. Does anyone have a recommendation on how to get an R-49 above a simple truss system. I don't want an attic space. Is it feasible to go to a 12" SIP and get R-48?

Sure. Some(most?) SIP manufacturers can also make custom sizes. Especially for a situation that is non-structural.
