Anyone built a
cupola
before? Looking to start trying to build one but I am a newbie. Is it really that hard?

That depends on a number of variables. Size, shape, location, just to name a few.
It is really easy to build a small one standing on the ground, or in a shop. It is not easy at all to build larger one on a three story house with a 12/12 roof pitch.

Cupolas occasionally act as the main roof of a tower, spire, or turret. When they do, they usually provide a considerably more elaborate enclosure than the average roof.
