Why is it that many foundations crack even when the footings are properly installed well below frost line on undisturbed soil with proper installation of rebar and good concrete.

My guess is uneven moisture distribution in clay soils.

Concrete is going to crack as it cures. It doesn't necessarily mean there is something wrong with it. Slabs with control joints look nice, but they still have cracks; it's just that the cracks are on the joints so you can't see them.

As far as I know, fresh foundation concrete has a high content of water. That settle in the first year or so. So that leave a gap in the content of your foundation, so you'll see some normal cracks. Also, the foundation will move just a little bit too. I have draining sand around and still, the foundation moved just a little bit in the first year or so, so I saw one crack at each side of the foundation (more open in the high end, more closed in the low end).
