old caulk out between interior log home

Me and my husband are renovating a log home of 35+ years. We have completed the outside (btw thank you for all the information to get that complete)and now are doing the inside. The logs have flat tops between and the old caulk is what we are taking out. There is this dry brown like foam stuff behind the caulk. How is the easiest way to get the old caulk off and insulate without getting moisture between the logs. Any information will be appreciated. Thank you, V/R Helen and Tim
