Can I turn off one head of the mini split with out effecting the performance of the other two?

Turn it off how? By thermostat?......what kind of minisplit? how many heads?..........

Quality ductless minis have inverter technology which allows the compressor pump to be driven at a variable speed, depending on total system requirements. If by "turning off", you mean turning down the set temp on one of the heads, so it isn't calling for heat, then, yes, you can do that and still get efficient operation at the other two heads for such a system. If you attempted to do the same thing with ductless minis of yesteryear, you might lose efficiency due to short cycling, etc.
