Insulating flat roof from inside/Replacing Flat Roof

Hey guys, New member here in AWESOME Upstate NY where it's FREEZING out! I guess I can't complain, better day than the last couple! I am renovating a 1950s ranch style flat roof house, one story. First bedroom I did allowed me to see into the depths of the roof. The house is constructed with 2x8 ceiling joists. The insulation that was in there was a rock wool insulation that was maybe a half an inch due to water infiltration throughout the years. I ordered R-30 Owens Corning Cathedral style insulation to give the minimum 1 inch air gap at the top with the 2x8 joists. I am also installing a smart vapor barrier made by CertainTeed to allow the A/C to dry the roof deck out in the summer from condensation. Keep in mind the flat roof is not vented at all and while there are soffits around the house, they are closed up with soffit board and aluminum. So few things for what I am doing on the inside is that correct? I am basically increasing the insulation so the room stays warmer and installing a vapor barrier to keep condensation at bay. Second thing, is I have received quotes for the roof. They are tearing off all 3 layers of flat roof and installing commercial Firestone EPDM Black roofing with .5 polyiso board mechanically fastened and of course all new flashing and commercial drip edge.
