I operate a kitchen remodeling company in Chicago, Il and I would just like to know if anyone here knows what green building products are popular with homeowners these days?

Define "green" in this context.

Granite countertops are popular with homeowners, fairly durable, low VOC, and usually have low embodied energy / carbon-footprint.

Induction cooktops are popular, more efficient and responsive than old-school electric stoves, and usually lower carbon footprint than gas ranges (except on heavily coal fired grid regions), and are better for indoor air quality since they only emit combustion byproducts into the room air when the food is burning.
