I am trying to build a mold free home in Arizona, yes there is mold here! I do not want to use CIP for the garage due to the expense so I would like to use galvanized steel studs and sheet the external siding with metal panels. What is a good material that is non toxic and mold resistant that I could use on the exterior structural sheathing before the metal siding? Thank you

Might as well not even insulate. Steel studs cancel insulation with how they transfer heat. Best way to get humidity down is to seal house and not to oversize air conditioner, keep windows closed and have a dehumidifier. Metal siding in the middle will trap moisture and cause mold. You only seal one side of a home envelope.
