As we begin to design our house, a healthy house is a TOP priority. We want very safe and clean drinking water. We will have city water available, but plan to use a cistern/rain water.
Really don't know what to do about plumbing for drinking water. Plenty of sources to tell you all of the choices have problems.

No shortage of bad opinions on this subject. Almost as toxic as Fox News...speaking of going down rabbit hole...
Frankly, the only way to plumb these days is PEX. Some plumber trade union lobbyists will tell you otherwise for sure and put out related propaganda to convince you too. Just use a quality PEX like Uponor PEX with ProPex expansion fittings made for potable water. Maybe put RO filtration on your drinking water faucets to be extra safe (not the PEX so much as other stuff that is in water these days). PEX has been safely and successfully used in Europe since the 1950s. |

Right, never use the cheap colored PEX ever. That discontinued stuff was made by some company that Uponor purchased years ago that used Chinese stuff. Only use the clear whitish Uponor PEX, Type A, expressly for potable water use (not for heating use) that uses expansion ProPex fittings. All the best PEX and hydronic radiant stuff comes from Europe.
