Framing inside Steel Building

I have a 5400 sq ft steel building with 12 ft eaves and will be framing office and living space inside the building using 2x4 wood studs and 8 ft ceilings. Due to high humidity in Alabama I am trying to find the best solution for sheathing and installing some type of vapor barrier on the backside of this wood framed wall. Steel building walls and ceiling have fiberglass insulation with white vinyl vapor barrier. I am leaving a 2 inch space between steel girts and wood framing to eliminate any thermal bridging. What is the best solution for sheathing and vapor barrier on backside of framed walls? I will be using fiberglass insulation in walls and ceilings. Inside will be finished with sheetrock. I am trying to eliminate condensation and potential mold growth.

white galvalume panels are ideal for your purpose , they are already insulated and white
