I live in Southwest Louisiana. I am not sure which is the better route to take with my ICF walls. I am building a 2100 sq. ft. house with 9' first story walls and the second story is all under/inside the hip roof. The roof is a 9/12 and the house is about a 40' x 40' square. (give or take) Any advice on which framing method for interior wall and roof with ICF exteriors would be very helpful. Thanks...

Because of termites in your area I would avoid using wood for interior framing.  Have you considered using metal studs and metal trusses/rafters?  Also look at paperless drywall.  (Starve the termites.)  If you are close to the gulf, then the studs should be G90 to protect them from salt air.
