Depth of electrical boxes -- too deep for ICF foam layer?

Hi all -- I've never installed electrical outlets before. Question: When you install outlets, do they go inside plastic boxes or do they go in by themselves? The "New Work" plastic boxes I see seem too deep to fit in the 2.5 inches of foam on typical ICFs. How are people installing them?

Even the outlets by themselves seem too deep sometimes. I'm seeing 3.5 inch depths on Home Depot product pages for some Leviton AFCI outlets. That's without any box, just the outlet assembly by itself (though I see under 2 inches on some models – not sure if the 3.5 inchers are accurate).

We found a steel box of a close depth and used a tapcon to attach them to the concrete. I think I had to put a 1/4 inch spacer to make it perfect. We used a 1/4-20 nut for the spacer.

We've used the inexo boxes made for icf's. They are very quick to install.

Keep in mind that an electrical box protrudes 1/2" from the face of the foam for drywall. So a 3" deep box would be the perfect depth.
We also use exclusively InExo boxes, but prior to that we never had difficulty finding boxes that fit. There are plenty out there.

I also used the InExo boxes and they worked perfectly. Worth the price.

I have seen these boxes. Now the only thing is what to do with ICF ceilings/roofs.
I do not plan on doing drywall only Stucco and Plaster Max. I will have no conventional walls or ceilings. I am running in to the problem with finding proper boxes or ideas for lighting. I think I plan on using all Lite form products.
