I've read some posts here that seem to infer that a SIP house will be less soundproof (from exterior noise sources) than a conventionally built house. Is this true and, if so, to what degree?

SIPs are a solid core. Low frequencies will travel through like a drum. They are a barrier to high frequency noises. So unless you plan to have people banging on the walls...
