I'm in Southern California, Los Angeles to be exact.  I would like to use SIPS for my interior walls.  They realy don't have to hold up any weight other than themselves.  I like the idea of prefabing this panels as they save time and the huge mess.  The only drawback is the price.  These things are way too expensive. Are there any SIPS out there that don't required extensive drywalling, finishing, etc.  To put drywall over the top of a SIP seems rather odd and drwall installation, mud, tape, skim coating, sanding, etc. makes it the longest process and it is extremely messy.  I'm looking for any ideas or solutions or products that already exist.  Thanks, DMD

dmd;

sometimes it doesn't pay to reinvent the wheel, I advise sticking with the studs & drywall you need to do the exterior walls and ceiling anyway. So what are you saving?

there are non structural panels that can be used for interior walls called nail base but you are probably going to find that it will be significantly more then stick framing even in LA. Panels with insulation installed before mechanicals also present a number of challenges.

You could use non-structural panel, one side OSB, the other blueboard. Look at winterpanel.com

You will need to drywall living space regardless, for fire protection. I have been in homes with interior 4" SIP walls and they are extremely quiet....... My own design will utilize SIPs on all walls except the closet and door wall between the bedrooms and the bathrooms. It will cost a little more than stick, but will be quiter and I am tired of looking at studs bending the drywall out in 2 year old homes..... The SIP panels are straight as an arrow......... Because of wiring, plumbing and mechanical work ....
I still maintain that; in general sips are not a practical alternative to stud framing on the interior.
If you are looking for straighter walls use steel studs, there is no warping, crowning, they are mold resistant, will not rot and are termite & carpenter ant proof!

Unless you have an approved Research Report from the City of Los Angeles, you cannot build with SIPs in the City of Los Angeles.  Second, the cost of SIPs is actually cheaper than conventional construction in the Los Angeles area.  You cannot fabricate your own panels and expect to get an approved inspection.  The panels must be engineered in order to get a building code approval and, the panels must be fabricated in an approved facility to meet the current building code.  On-site fabrication is a no-no, especially if you do not have the experience and tools to not violate any of the engineering constraints.

We have built over 30 projects in Los Angeles and I would strongly discourage your attempting to do anything that is not strictly legal in Los Angeles County. 

Lack of experience and knowledge is a very 'costly' combination - hire a professional and pay for it to be done 'once' and done 'right'.
