Anyone have any experience using the Zip System to build the cold roof over SIPs? It's been suggested to me with the advise that roofing paper should not be used on the SIPs. Any feedback is appreciated.

No you need a secondary water barrier if the SIPs are OSB skins

Thanks Chris. Should the valleys be flashed on the SIPs also?

absolutely, metal flashing first then paper over that , this is a minimum code requirement in most areas
