We are planning to use SIPs for the outer walls, is it worth using them for the inner walls as well when creating bedrooms/ bathrooms, garage etc;?

I am not a sip person but the items I would look into to make your decision because you can go either way....

Are sip walls going to be quieter then stud walls?
Which is going to be cheaper including assembly labor and the cost of the wall?
Which is going to allow for easy duct/electric/plumbing through the walls and the cost effects to the trades?

For interior walls NO- stud walls are more cost effective and practical .., garage walls yes

Inner walls do serve purpose in SIPS as they are using EPS to construct. Therefore any area that is using EPS that can be closed off will hold insulation value including the roof.

an un-needed expense, interior walls are best accomplished with studs for future wiring access, plumbing stack locations and standard door jambs , anyone that says otherwise lacks construction experience and knowledge
