I've done a lot of studying on this subject lately. The biggest problem with drywall uplift is moisture building up in the attic and causing the top cord of the trusses to expand. I'll wager that your attic doesn't have enough ventillation to remove moisture in the winter. Increase the airflow in the attic and you will see a DRAMATIC decrease in the uplift.

If you have roof trusses in cold climates, uplift can also be caused by the bottom chord of the roof trusses being heavily insulated while the top chord is not.

I agree more with the cause being attributed to the moisture and wide temperature swings due to lack of ventilation. I don’t know why I did not think of it before.
The best way to tell if it is a problem is to look for frost in the attic in the winter after a few days of sub-zero temperatures. I would think a properly cure truss with the lower cord encased in spray urethane insulation would be less likely to “uplift”.
