I understand how tile and even wood or carpet can be used as a finish covering for floors with radiant heating, but what about coverings such as Marmoleum (the pine dust based linoleum) or cork? Aren't these applied with glue? And if so, will the glue hold with the heat source beneath it?

Generally, yes. Your heat load analysis will dictate the "heat" needed to replace the heat lost.
