We're looking to finish our 2nd floor. The house was built 50 years ago, but the 2nd floor was only roughed in. The prior owner ran plumbing up for baseboard heat, but didn't finish. We'd prefer radiant floor over baseboard heat. What are our options? As the 1st floor is finished, we don't have easy access to the underside of the subfloor. As the subfloor is down, replacing it with the warmboard stuff, or similar, would be labor intensive (walls are already studded in too). Does this mean our only option is to go with a thin slab?

Most systems don't replace the subfloor. The panels are attached to the subfloor.
