In most areas, I believe it is required by code to install some type of material such as drywall over the eps. I've seen drywall and Stucco, are there any other options available?

Check out Instacoat, they have a 1 hour fire rated spray on system for interior use...

The "code" essentially dictates a 15 minute thermal barrier. Last I knew 1/2" plywood is a 15 minute thermal barrier. There are many materials that meet the 15 minute thermal barrier requirement, what are you trying to acheive? and is cost the driving issue?
