vapor barrier on fire damaged brick house

We have gutted a fire damaged brick house, leaving only the brick veneer exterior walls. The floors, rim joists, and stud walls are being replaced. We cannot put exterior sheeting on the stud walls because we will not be able to attach the brick clips to the studs. We are thinking about using closed cell spray foam, about 1 inch thick, to the interior side of the brick, after the brick clips have been attached. There are some large gaps in the mortar on the interior side of the brick (which is normal) but could the foam expand between the bricks and cause joint separation? We also thought about using shotcrete or gunite first to fill the gaps in the mortar and then use spray foam over that for the vapor barrier and then fiberglass insulation (again because we cannot put the exterior sheeting on). We’re sure others have had to deal with this and would appreciate any suggestions. Also, we live in northern Mississippi.  Thanks!

you should tear the brick down, the measures taken to try and retrofit stud walls, sheathing, brick ties and vapor barrier from the inside out are not worth the effort of saving brick and mortar that has been exposed to high temperatures in a fire. the integrity of the brick veneer has most likely been compromised.
Sheathing ensures the overall structural integrity of the stud wall, you would need to lateraly brace the wall another way, its not that it can't be done, but the right way to do it is to start over.
