Another subject which is not particular clear to me is cold roof vs. hot roof. I found one discussion on this forum regarding that matter, but it is not very helpful. I am thinking about using SIPs instead of just  the plywood for a roof sheating, what do you think? Also, any advices regarding advantages and disadvantages of different roof covering materials are highly appreciated, obviously I am looking for a price/quality balance. I saw Interlock roofing ad in the magazine recently, is their product a really good choice?

It would be more accurate to say vented attic or climate controlled. Or maybe insulated roof or not. This subject has been done a lot, try a search for more info.

I would use a sip roof with a vaulted ceiling, maybe exposed beams. An insulated roof can add space. But an insulated ceiling and vented attic is the least expensive.

I am building my own place with wood trusses, insulated ceiling and exposed fastener sheet-metal roof.
