Your plumber and finisher aren't going to do anything new per se. Plumber just needs to stay out of the SIPs by venting interior walls where available. I have my plumber run my supply lines from the slab to the toilet rather then the wall as well. In the kitchen you can probably use a
Studor or loop vent rather then have to cut up your panel. And you can fur out where necessary to accomodate a chase for plumbing. And if worse comes to worse you can run panels up to a point and stick frame around an issue.
Finish guy doesn't do anything different. You might add some fur strips to your walls behind the cabinets. If you rip some strips at an angle setting half on wall and half on cabinet they will hang very easily. There is a post in here somewhere about it. You also need to tell your door guy about the thickness of your outside walls as you will need jam extensioins but that shouldn't be a big deal.
